Chicken Salad
Ingredients: 2 chicken breast halves, half cup each of frozen peas and carrots, one-fourth cup mayonnaise, 1 tbsp of fresh chopped parsley.
Method of Preparation: Bake the chicken for about 20-25 minutes until they are cooked thoroughly. Chop it into small pieces. Boil the frozen peas for about 10-15 minutes, drain it and let it cool. In a large bowl place the chicken, peas and add all the ingredients to it. Mix it well. You can serve this salad with bread or a pita.
Potato and Ham Casserole
Ingredients: 5 cups of thinly sliced potatoes, 1 pound ham (cooked and diced), one-fourth cup chopped onion, half cup shredded cheese, 1 cup heavy cream, half cup milk, 2 tbsp butter, salt and pepper (as per taste).
Method of Preparation: Melt butter in a pan. Put ham and chopped onions in the pan and cook for about two minutes. Now add milk and cream and stir the mixture continuously until it becomes thick and bubbly. But do not bring it to boil. Add potatoes, salt and pepper to the mixture. Cover and simmer the mixture for about 8-10 minutes. Remove the cover and pour the mixture into a greased baking dish. Top it up with shredded cheese. Bake it in an oven or a microwave at 350F for about 40-45 minutes.
Peanut Butter and Banana Smoothies
Ingredients: 1 cup of frozen pineapple chunks, 2 cups of frozen banana slices, 1 cup ice, one-fourth cup each of peanut butter and vanilla yogurt, one-and-half cups of vanilla soy milk, 2 tbsp of honey.
Method of Preparation: Place ice, frozen banana slices and pineapple chunks in the bottom of the blender. Pour vanilla soy milk over it and add all the remaining ingredients. Puree the mixture until it becomes smooth. Serve it immediately.

Picky Eater Recipes: Cheese and Honey Ham Sandwich Jul 23 2008
Ingredients: 2 slices of bread, 2 tbsp of shredded cheese, 1 thin slice of cooked deli ham, 1 tbsp of honey, 2 tsp butter (unsalted).
Method of Preparation: Take one slice of bread and put some shredded cheese on it. Place the deli ham slice over the bread and top it with another bread slice. In a frying pan, melt 1 tsp of butter and place the sandwich in it. Cook it for about 3 minutes and flip it. Now add another tsp of butter to the pan and cook for 2 minutes. Sprinkle half the honey over the sandwich and allow it to cook for a minute. Flip the sandwich and add the remaining honey to the other side. Cut the sandwich diagonally and serve hot.

Ingredients: 1 cup of milk, 1 egg, 2 cups baking mix, half cup cooked and mashed sweet potato, one-fourth cup of carbonated water, one-fourth tsp of nutmeg, half tsp each of cinnamon and mace, half cup of chopped walnuts or almonds.
Method of Preparation: Place all the above ingredients in a large bowl and mix them until a batter is formed. Allow the batter to rest for about 10-15 minutes. Take a frying pan and heat it over a medium heat. Now pour about one cup of the batter in the frying pan. Let it stand for a minute. Flip the pancake as soon as you find bubbles appearing around edges. Cook the other side until it turns golden brown. Serve warm. If you want, you can garnish the pancake with almonds or walnuts.
